Freeze-drying, also known as lyophilization, is a low-temperature dehydration process that involves freezing the product, reducing the pressure, and then removing the ice by sublimation. This is the difference. Vacuum sublimation is a procedure for almost complete removal of moisture from various substances. The sublimation method is good because it ensures the evaporation of water from frozen products without its transition to liquid. Therefore, one of the stages of the technology is the freezing process followed by rapid evaporation of water in an airless environment (under the influence of a vacuum). Water evaporation during freeze-drying from frozen raw materials occurs without thawing due to the effect of low pressure. Thus, the effect of a vacuum allows you to remove water and other liquids from the processed raw materials without losing their properties and original appearance.
